Vinaigrette: – garlic, minced – lemons, juiced – red-wine vinegar – roasted sesame seeds – paprika – kosher salt – extra-virgin olive oil

Ingredients

Salad: – baby spring mix – shallot, thinly sliced – carrots, thinly sliced – radishes, thinly sliced – dried roasted pepitas – Grilled carne asada, sliced and cold – avocados, pitted, peeled, and sliced – queso fresco, optional – guacamole, optional

Ingredients

Step 1 Vinaigrette: Combine garlic, lemon juice, vinegar, sesame seeds, paprika, and salt in a small mason jar. Add olive oil and shake. Set aside.

Step 2 Salad: Place the salad greens in a large bowl; sprinkle the shallot, carrots, and radishes on top and season. Gently toss the salad with vinaigrette.

Step 3 – Arrange the skirt steak, avocados slices, and queso fresco if using.

Step 4 – Drizzle any remaining vinaigrette on and around the salad, focusing on the avocado and beef. Sprinkle the pepitas on top.
