WALDORF SALAD WITH YOGHURT

This dish can be served as a light appetizer or as a side dish. Like the traditional version, this recipe consists of colorful ingredients including fresh apples, crisp celery, grapes, and nuts, but in place of the mayonnaise I use yoghurt.

– 2 stalks celery , diced – 2 apples, cored, and chopped – 1/2 cup chopped green grapes – ¼ cup pecan pieces – ½ cup raisins, optional – 1 cup Mountain High low-fat yogurt

Ingredients

Step  1 – Combine celery, apples, grapes, pecans, and raisins, if using, in a medium bowl.

Step  2 – Cook and stir over medium heat for 15 to 20 minutes or until berries pop and the mixture is thickened. Stir in pomegranate seeds; cook 2 minutes longer.

Step  3 – Serve at room temperature or chilled.
