Not sure what to do with your leftovers from Thanksgiving dinner? Combine your turkey, mashed potatoes, cranberry sauce, and more together in this delicious leftover turkey casserole recipe!
4cupscoarsely chopped leftover cooked turkey, about 1 lb.
3/4cupHellmann's® or Best Foods® Real Mayonnaise, divided
1/4cupwhole berry cranberry sauce
chopped roasted green chile, optional
2cupsleftover mashed potatoes
1cupshredded part-skim mozzarella cheese
Instructions
Preheat oven to 375 degrees F.
Spray 8-inch. baking dish with no-stick cooking spray. Spoon in 1-1/2 cups stuffing, then top with turkey.
Combine 1/4 cup mayonnaise with cranberry sauce; evenly spread over turkey.
Combine chopped roasted green chile, if using with remaining 1/2 cup mayonnaise, potatoes and cheese in large bowl. Evenly spread on turkey, then top with remaining 1-1/2 cups stuffing.
Bake 40 minutes or until heated through.
Let stand 10 minutes before serving. Garnish, if desired, with dried cranberries.
Notes
This casserole can even be assembled on Thanksgiving Day as you are putting away all your leftovers. Then, on the day after Thanksgiving all you have to do is pull it out of your fridge and bake.
