– olive oil – ground beef – Mexican pork or beef chorizo, casings removed – pinto beans, rinsed and drained or 4 cups homemade Frijoles de la Olla – chicken broth – Red Chile Sauce See all other ingredients on the blog (swipe up).

Ingredients

Step 1 – Drizzle olive oil in a large pot on medium heat and add the ground beef and brown. Drain off any excess grease.

Step 2 – Add the chorizo by crumbling it into the cooked ground beef. Cook the chorizo. Using a potato masher, combine the beef and chorizo together.

Step 3 – Add the drained and rinsed beans and broth and cook. Add the red chile sauce, water, and oregano and cook until it starts to boil, stirring occasionally.

Step 4 – Add salt to taste. Ladle into bowls and sprinkle with a handful of cheese or toppings of your choice.
