Back to School Giveaway + Mozzarella, Ham, and Pesto Panini
I’m kind of freaking out – July is almost over, which means summer is almost over, and my kiddos will soon have to return to school. I think it’s just starting to hit me that ourย daughter will be a freshman in high school. And our son will be a third grader. Where did the years go? I hate that time flies by so quickly.

When it comes to school lunches I usually pack tortas, burritos, wraps, and sandwiches, but their absolute favorite lunch isย a panini.ย This hamย and pesto panini is an easy recipe to make and the best part is a panini maker is not needed. It tastes great at room temperature orย cold and makes a great school lunch box meal.
I have publishedย aย Smoked Ham and Chimichurri Paniniย and this one is very similar, but way easier to make. Instead of homemade chimichurri sauce I used jarred pesto sauce and roasted redย peppers.ย Easy peasy lemon squeezy!

Mozzarella, Ham, and Pesto Panini
Ingredients
- 1 10 ounce loaf ciabatta, halved horizontally
- extra-virgin olive oil
- 8 ounces deli smoked ham
- mozzarella, sliced
- roasted red peppers, sliced
Instructions
- Preheat oven to 350 degrees F.
- Place two halves of bread on a baking sheet.
- Brush one cut side of ciabatta with olive oil and spoon on pestoย sauce and arrange the ham slices on top. On the opposite layer brush with olive oil and layer with red pepper, and top with cheese.
- Bake open for 10 minutes.
- Close sandwich and bake for an additional 5 minutes until cheese melts.
- Cut the sandwich into quarters.
Notes
- These can be made ahead of time and stored in the fridge in sandwich bags.ย

I would get the Freezable Grocery Bag in the Vine pattern. I would use it when I go shopping kind of far away from home. I can put the perishables in there.
I love the freezable grocery bag what a great idea, we live on an Island and sometimes we have groceries in the car in the ferry line for a couple of hours so this would be great for us to have.

I love the Uptown lunch bags in animal or ziggy. I also am eyeing the freezable grocery bags!!! I would use those often for packing my kids lunch and grocery shopping at my favorite store!

I love the freezable salad bag the most, I love the zig zag pattern for myself but I would have to choose the black bag for my son. My 12 year old loves salad and fresh veggies, they do get gross in a lunch bag though. This may be the answer to that.
