fig tarts with honey and sugar

Figs are so gorgeous! I have my top three pretty fruits, and figs are on that list along with pomegranates and mangos. You might remember one of my very first recipes of honey glazed fig empanadas along with this video. Every time I see figs now I’m reminded of that corny little home video my BFF captured of me and the words she told me โ€“ โ€œOne day, youโ€™ll be on the Today Showโ€. It hasnโ€™t happened yet, but itโ€™s those words that made me realize I need to dream BIG. She has been my friend since we were 15 years old. She now lives in San Diego so we don’t see or talk to each other frequently, but when we do, we pick up right where we left off. Her daughter is my godchild and just graduated from college. I’m so proud of her and the amazing mother who raised her. Time has gone by so fast, and I feel truly blessed that our friendship has stood the test of time.

This recipe is dedicated to my best friend who has always been there for me. She is there when I need to vent, cry, share exciting news, or need advice. She is always so encouraging, so fair, and so motivating. I just wish we were neighbors so that I can physically share this dessert with her.

Rachel, I love you girl, and want you to know how much you mean to me. Thank you for listening and being my friend.
