Grilled Pineapple Mojito

I have an obsession with grilling fruit. I love to grill avocados, peaches, and pineapple just to name a few. I recently made tacos al pastor and as I was grilling pineapple had the idea of making a cocktail.
The grilled pineapple in this cocktail gives it a smoky-sweet flavor. The natural sugars in the pineapple caramelize giving this cocktail a distinct flavor.
This cocktail is a blend of a mojito and a piรฑa colada in one. After the fruit is charred, muddle it with mint, fresh squeezed lime juice, and agave nectar; shake it with white rum and the new Baileys Almande, a delicious and light tasting spirit from the makers of Baileys.

Grilled Pineapple Mojito
Ingredients
- 2 rings fresh pineapple
- 6 mint leaves
- 1 tablespoon lime juice
- 1 tablespoon agave nectar
- 2 ounces white rum
- 3 ounces Baileys Almande, or regular Baileys
- 4 ounces pineapple juice
Instructions
- Grill the pineapple rings to achieve grill marks.
- Muddle 1 grilled pineapple ring with mint leaves, lime juice, and agave nectar.
- Place muddled ingredients into a shaker. Combine rum, Baileys Almande, and pineapple juice.
- Shake and pour over ice. Do not strain.
- Garnish with a pineapple wedge.
