grilled pineapple mojito

I have an obsession with grilling fruit. I love to grill avocados, peaches, and pineapple just to name a few. I recently made tacos al pastor and as I was grilling pineapple had the idea of making a cocktail.

The grilled pineapple in this cocktail gives it a smoky-sweet flavor. The natural sugars in the pineapple caramelize giving this cocktail a distinct flavor.

This cocktail is a blend of a mojito and a piรฑa colada in one. After the fruit is charred, muddle it with mint, fresh squeezed lime juice, and agave nectar; shake it with white rum and the new Baileys Almande, a delicious and light tasting spirit from the makers of Baileys.

This innovative dairy and gluten free spirit is the first to blend the luscious nutty flavors of real almond milk and vanilla. The liqueur is low in calories compared to Baileys Original, making it ideal for light summer cocktails.

I am honored to be a brand influencer with Baileys Almande and plan to share another yummy summer cocktail next month. Please follow me on Instagram where I plan to share more photos of my Baileys Almande adventures. Itโ€™s a tough job, but somebodyโ€™s gotta do it.

I am so happy to see this! We, too, have discovered any combination of rum, pineapple, lime, coconut, and mint is purely delightful.
