Grilled Pineapple Mojito

I have an obsession with grilling fruit. I love to grill avocados, peaches, and pineapple just to name a few. I recently made tacos al pastor and as I was grilling pineapple had the idea of making a cocktail.
The grilled pineapple in this cocktail gives it a smoky-sweet flavor. The natural sugars in the pineapple caramelize giving this cocktail a distinct flavor.
This cocktail is a blend of a mojito and a piña colada in one. After the fruit is charred, muddle it with mint, fresh squeezed lime juice, and agave nectar; shake it with white rum and the new Baileys Almande, a delicious and light tasting spirit from the makers of Baileys.
