These Sizzling Shrimp Fajitas bring all of that fun to your own kitchen, but they’re surprisingly quick to make. Juicy shrimp are marinated with homemade red chile sauce, homemade taco seasoning, fresh lemon juice, garlic, and cilantro, then cooked with colorful bell peppers and onions.

Serve everything hot with warm flour tortillas and your favorite toppings for an easy fajita dinner that feels a little more special than the usual weeknight meal.

How to Make Sizzling Shrimp Fajitas
Step 1: Make the marinade. In a large bowl, combine the red chile sauce, taco seasoning, lemon juice, garlic, and cilantro.
Step 2: Marinate the shrimp. Add the shrimp and toss until evenly coated. Cover and refrigerate for 15 to 30 minutes. Avoid marinating much longer because the acid in the lemon juice can begin to change the texture of the shrimp.

Step 3: Cook the peppers and onions. Heat a large cast-iron skillet over medium-high heat. Add the oil, bell peppers, and onion and cook, stirring occasionally, until tender-crisp and lightly charred. Transfer the vegetables to a plate and keep warm.
Step 4: Cook the shrimp. Add the marinated shrimp to the hot skillet in a single layer. Cook for about 1 to 2 minutes per side, just until the shrimp are pink and opaque. Don’t overcook them or they’ll become rubbery.

Step 5: Bring it all together. Return the peppers and onions to the skillet and toss briefly with the shrimp until everything is hot. Serve immediately with warm flour tortillas and your favorite fajita toppings.

Tips for the Best Shrimp Fajitas
- Don’t marinate the shrimp too long. Because the marinade contains fresh lemon juice, 15 to 30 minutes is plenty. Too much time in the acidic marinade can affect the shrimp’s texture.
- Pat the shrimp dry first. Especially if you’re using thawed frozen shrimp. Removing excess moisture helps the marinade cling and prevents watery fajitas.
- Get the skillet nice and hot. A hot cast-iron skillet helps the peppers and onions develop those lightly charred edges that make restaurant-style fajitas so good.
- Cook the vegetables first. Shrimp cook much faster than peppers and onions, so cooking the vegetables first keeps you from overcooking the shrimp.
- Don’t crowd the shrimp. Give them enough room to make contact with the hot skillet. If your pan is smaller, cook them in two batches.
- Watch the shrimp, not the clock. Remove them from the heat once they’re pink and opaque and have curled into a loose “C.” If they curl tightly into an “O,” they’re usually overcooked.

sliced the onions and peppers in the morning before my children went to school and kept them in a bowl in the fridge until ready to prepare meal. I also mixed the spices together and kept it in a baggy until ready to cook. It took about 10 minutes to do it all and then when I was ready to cook everything was ready.
