Where did the summer go? This weekend we were busy buying school supplies and going through the kids closets and drawers making a list of outgrown clothes to replace. Thankfully the one thing I didn’t have to purchase this year was new school lunch bags. PackIt sent my kids spanking new lunch bags with their choice of pattern.

Slices of fresh tomatoes and mozzarella, fresh basil, and a drizzle of olive oil and balsamic vinegar with the addition of prosciutto in a wheat tortilla are filling and hearty.

Caprese Salad and Prosciutto Wrap

This easy lunch wrap features slices of fresh tomatoes and mozzarella, fresh basil, and a drizzle of olive oil and balsamic vinegar with the addition of prosciutto. All wrapped up in a wheat tortilla - a filling and hearty meal.

Ingredients 

  • 2 whole wheat tortillas
  • Prosciutto ham
  • fresh mozzarella cheese, sliced
  • 1 tomato, sliced
  • basil leaves
  • olive oil
  • balsamic vinegar
  • Kosher salt and freshly ground black pepper

Instructions 

  • Layer slices of prosciutto, mozzarella cheese, and tomato on tortilla.
  • Add basil leaves and drizzle with olive oil and balsamic vinegar.
  • Season with kosher salt and pepper.
  • Fold the tortilla in thirds and serve.

Notes

For a meatless version, leave out the ham and/or add some coconut bacon.
