Known to some as the Peruvian’s Moscow Mule, a traditional chilcano is a refreshing mixed drink made with pisco, lime, and ginger. As early as the 1800s, long before the Moscow Mule became popular, Peruvians were mixing pisco and ginger ale and using it as a hangover cure. Today it is one of Peru’s most popular drinks.

Not to be confused with chilcano de pescado (fish soup) with whom it shares its name, a chilcano de pisco is a refreshing cocktail made with pisco, a unique brandy from Peru and Chile that can range in flavor from floral and aromatic, to vegetal and savory. Pisco is quite potent and there is no substitute for the flavor of Pisco, but if you can’t find it you could substitute with tequila blanco.

In this recipe I’m giving the classic cocktail a flavor spike with Hennessy. The spice from Hennessy is a perfect complement to the ginger bite from the ginger beer. This delicious and refreshing simple cocktail is made with fresh lime juice, pisco, Hennessy, and ginger beer.

A chilcano is a refreshing cocktail and pairs nicely with ceviche. Ceviche, also known as cebiche or seviche, usually consists of seafood marinated with lime juice where the acidity of the lime juice actually “cooks” the seafood.

The spice from Hennessy is a perfect complement to the ginger bite from the ginger beer. This delicious and refreshing simple cocktail is made with fresh lime juice, pisco, Hennessy, and ginger beer.

Ingredients

  • 1 ounce Pisco or tequila, see notes
  • 1 ounce Hennessy V.S
  • 1/2 ounce lime juice
  • 2 to 4 ounces ginger beer
  • Angostura bitters
  • lime slice, for garnish
  • fresh ginger slices, for garnish

Instructions 

  • Pour the pisco, Henessy, and lime juice in a glass filled with ice. Top with ginger beer and add a couple of drops of bitters.
  • Garnish with a lime slice and or fresh ginger slices.
