How to Make
First up, get some water boiling for your pasta. Salt it enough so that it tastes like the sea.
TIP: If possible, use an electric kettle to get your water boiling faster! Itโll shave about 10 minutes off the total time for this dish.
Bring a large pot of water and salt to boil. Cook pasta al dente, according to package directions. Drain pasta.
While the pasta is cooking, get started on the sauce.
Chipotle Pasta Sauce
Heat oil in a large skillet on medium heat. Add diced onions, bell peppers, garlic, and tomato and sautรฉ for 3 to 4 minutes.
Add the sauce, diced chipotle peppers, sautรฉed vegetables, adobo sauce, and ยฝ cup of water. Bring to a boil and then simmer on low for 10 to 12 minutes. Add cooked pasta to sauce to coat. Season to taste.
Chipotle Shrimp
Next, in a small bowl, combine chipotle powder, salt, and pepper and sprinkle over shrimp. Preheat skillet on medium heat. Add oil and cook shrimp for 3 to 4 minutes per side.
TIP: Be sure not to overcook your shrimp! They are done when they are *just* opaque and pink. If they start tightening up into little โoโs,โ they will become rubbery and tough.
Plating
Toss shrimp and pasta together to warm. If youโre feeling fancy, garnish with fresh basil.
