If I had to pick a favorite ingredient I would be torn between avocados and long green chile.

I have no idea why I never thought of combining my two favorite ingredients into one dish. I’m talking Hatch green chile guacamole amigos!

What kind of chile can be used?

Thankfully, I have a freezer full of roasted Hatch chile because I stock up every season. It is a seasonal ingredient and more than likely not available in your grocery store until August or September. Sometimes, you might be lucky and find it roasted in the freezer aisle.

Fear not, this recipe can also be made with Anaheim chile peppers which are readily available year-round. Or, for a mild chile pepper, try poblanos.

My only suggestion is do not buy canned chile. You will not achieve the same flavor profile that only comes from freshly roasted chile.

This guacamole is simple to make with only a handful of ingredients – avocados, green chile, red onion, fresh lime juice, cilantro, and salt to taste.

As much as I love traditional tortilla chips, they aren’t the healthiest choice. They can be fattening, and they’re high in salt, instead pair guacamole with blue corn tortilla chips.

The vibrant hue in blue corn chips offer some health benefits over traditional yellow corn chips.

Blue corn chips pack more antioxidants, they are lower in carbohydrates, and contain three times as much fiber as chips made from yellow corn.

While you might be tempted to dive right into blue corn chips, it is important to know that while they may have some advantages over yellow corn chips, moderation is still necessary.

Ingredients 

  • 4 ripe large avocados
  • 1/2 cup red onion, minced
  • 1/4 cup cilantro, chopped
  • 2-3 roasted Hatch or Anaheim chile peppers, diced
  • 1 jalapeƱo, minced (optional)
  • Salt to taste
  • 1-2 tablespoons fresh lime juice
  • Blue corn tortilla chips or veggies to serve

Instructions 

  • Cut the avocado in half. Twist to remove the pit. Scoop out the pulp. Place in a medium-size bowl and mash the avocado with a fork so that the mixture is a bit chunky.
  • Add the onion, cilantro, chile, and salt. Drizzle the lime juice over all the ingredients and give everything a good stir, but don't overdo it.
  • Serve with blue corn tortilla chips or veggies.

  • If you can’t find Hatch chile peppers this recipe can also be made with Anaheim chile peppers, or for a mild chile pepper, try poblanos.
  • For best flavor, do not use canned chile, use fresh roasted chile.

  • If you like spice, add finely minced jalapeƱo to the guacamole.
  • If you are not a fan of cilantro feel free to omit.
  • Make ahead tip: Avocado oxidizes (turns brown) when exposed to oxygen for too long. Prep any of the ingredients as early as you like, but leave the avocado mashing until the last minute.Ā

    Thanks for using Hatch Chile. It’s my favorite as well. My Mom taught me how to roast these beautiful chile’s and her Mother-in-law (New Mexican Native American) showed her…
    But alas, since this isolation time, I have no avocados. So, instead, I wrapped my chicken “fingers” in them and breaded and fried them last night for dinner. Oh Goodness!!! So gooood!!
    Anyways…since I’m writing to you about good food, can you please suggest a recipe for dried corn from New Mexico? I picked up a few bags last April when I visited my family and now that I have time, I’d like to cook with it. I have blue corn and multicolored corn. Probably about 3-4 lbs.
    I really appreciate you and your skills and your emails. I look forward to reading your stories and trying your recipes.
