Spice up your menu with these Maple Syrup Chipotle Roasted Brussels Sprouts. They’re lightly roasted in the oven with a little bit of olive oil and salt, and then drizzled with a maple syrup-chipotle mixture and roasted a bit more.

Can you believe I did not eat brussels sprouts until I was in my 30โ€™s? My mother-in-law served them for Thanksgiving and I was giggling to myself as I took my first bite. I just couldnโ€™t wait to taste them.

I remember as a little girl wanting to taste brussels sprouts โ€“ my family never bought them, nor did I ever see them in a grocery store, but I would see them on TV shows like The Brady Bunch.

Now, I canโ€™t get enough of them! I especially love them roasted like these Roasted Brussels Sprouts and Butternut Squash I make for the holidays.

This recipe is a great side dish perfect for Easter or any busy weeknight. And of course, I had to give them a yummy Mexican twist with the addition of chipotle peppers in adobo sauce.

The maple syrup gives these brussels sprouts a lovely caramel and woodsy flavor with a slightly spicy and smoky hint from the chipotle peppers.

Maple Syrup Chipotle Roasted Brussels Sprouts

Ingredients 

Instructions 

  • Preheat the oven to 400 degrees F.
  • Place the brussels sproutson a rimmed sheet pan and drizzle them with olive oil. Sprinkle with salt and toss them together.
  • Roast for 15 minutes, or until slightly browned.
  • Meanwhile, in a small bowl combine minced peppers, adobo sauce, and maple syrup.
  • Drizzle with the maple syrup chipotle mixture and combine, but reserve a few tablespoons for serving.
  • Return to oven and bake for an additional 10 minutes.
  • Drizzle with any remaining sauce, and serve sprouts while warm.

Notes

  • Feel free to use honey instead of maple syrup.
  • Reduce the amount of chipotle to 1 or 2 chiles for a milder version.ย

    These were very delicious. ย I have been trying to shove Brussel Sprouts down my son’s throat for 20 years and he’ll eat them, but he’s never really loved them. ย He loved these.ย 

    When I use chipotles according to a recipe, I usually try to get out the seeds for my husband. And I usually subtract one chipotle than recommended. ย This time I went all out. ย I chopped up three whole chipotles and didn’t care about the seeds. I added the sauce without worrying about the seeds. ย It wasn’t hot at all. Just a beautiful taste. ย 

    My one change was that I used honey instead of maple syrup because that is what I had on hand. ย My husband does use Log Cabin maple syrup, but I figure this recipe probably means “real” maple syrup and I’m not going to buy that. ย It’s pricey and I rarely have a call for it, so I didn’t want to invest.ย 

    I used the honey that my husband has. ย (Always about him. ย Hey, he’s the sweet tooth in the family.) ย I kind of thought as I was measuring out the honey, “Wow that seems like a lot of honey. Should I stop pouring?” ย  But I went ahead and followed the recipe and it was just lovely. ย Best brussels sprouts I ever made and I make a lot. ย Too much, my son would say.ย 

    BTW, Yvette, unlike your childhood, I was raised on Brussel Sprouts. ย My mom called them “frog heads.” ย I just always liked them. ย I don’t know why my son is so resistant. ย It’s not that he hates vegetables. He loves broccoli. ย And he loved your recipe.ย
