You can serve up these mouthwatering mini quiches in 30 minutes. A delicious mixture of eggs, cheese, and chorizo. These are great for breakfast, lunch, or dinner.

The best part is that they can be made ahead and frozen. Make a giant batch this month, store them in a freezer bag and then pop a few out at a time for unexpected guests, parties, or an evening you do not want to make dinner. They reheat nicely in the microwave or in bulk in the oven.

    Hi, what type of chorizo do you use? I’m originally from El Paso and in Colorado. ย I can’t find Peytons chorizo anywhere. I miss the good stuff but not sure if you found an alternative.ย

      Hi Valerie! So happy to hear you are from El Paso too. I used to LOVE Peyton’s too, but if I taste it now, it is just to greasy for my taste. I prefer Cacique chorizo. Super flavorful and not as greasy. Stay tuned — I plan to post a homemade chorizo soon.

    I made these 2 days ago for a party but added chopped green chili & 1/4 cup of Herdez salsa it added a little spice to it & everyone loved them. ย What would you epect from someone from Arizona!
