Remember the recent fiesta I hosted where I set up an aguas frescas bar? We had some leftover aguas frescas and I made these refreshing popsicles.

I am loving my new stainless steel popsicle mold, but you do not need one to make paletas. You can also use little disposable plastic or paper cups with wooden popsicle sticks. Remember the little Dixie cups? Those work great.

If you are not using a popsicle mold you will need to freeze the popsicles without the sticks for about 30 minutes. After 30 minutes add the popsicle sticks. This will keep the sticks upright in the popsicle as they finish freezing.

Fruity agua de melon and a floral and spicy agua de Jamaica make delicious traditional Mexican paletas. One lick and you’ll be transported to a beach in Mexico. Ok, kinda dreaming, but they will cool you off.

Instructions 

  • Fill popsicle molds.
  • Place in the freezer for at least 4 hours or overnight.

Notes

  • Rinse the molds for a few seconds under running warm water to loosen the popsicles.
  • If you are not using a popsicle mold you will need to freeze the popsicles without the sticks for about 30 minutes. After 30 minutes add the popsicle sticks. This will keep the sticks upright in the popsicle as they finish freezing.
