Why You’ll Love This Recipe
With summer around the corner, I’ve been in a frenzy pulling out all of my favorite strawberry recipes.
As much as I love my recipes for Lemon Berry Spring Fling Cake and Bourbon Bread Pudding with Berry Sauce, those are what I’d classify as dinner party desserts โ or far too fussy (and rich!) for a weeknight family dinner.
Luckily, this dessert taco recipe meets at the intersection of sweet, simple, and relatively healthy!
Sweet and crispy taco shells are dusted with cinnamon sugar and dolloped with an avocado vanilla yogurt cheesecake studded with chopped strawberries to resemble โguacamole.โ They are then filled with colorful tropical fruits and berries and garnished with coconut flakes to resemble โcheese.โ
Aside from being absolutely adorable and lick-the-plate tasty, these fruity cheesecake tacos are also:
- Quick & Easy – You only need about 10 minutes of active prep to make them, so they’re simple enough for any weeknight.
- Versatile – Feel free to use any fruit you like, or fill the dessert taco shells with nearly anything your heart desires. Read on below for tons of ideas.
- Wholesome & Nutritious – These tasty nibbles are sweet enough for a post-dinner snack but virtuous enough to serve as breakfast. In fact, feel free to use the churro-flavored shells as a kid-friendly option for your next yogurt parfait breakfast spread!
- Made With Only 8 Ingredients – Chances are, you already have most of what you need on hand.
Ingredients & Substitutions
As promised, you only need a handful of ingredients to make this adorably delicious taco dessert. Here’s what to grab:
- Granulated Sugar & Ground Cinnamon – While you’re welcome to buy pre-mixed cinnamon sugar at the store, making your own is a snap and is much cheaper.
- Olive Oil – Feel free to swap in your preferred cooking oil or use melted butter.
- Mini Flour Tortillas – I find that one dessert taco made from a street taco mini tortilla is the perfect amount of sweet after dinner. Feel free to use taco-sized tortillas if you want larger portions.
- Vanilla Yogurt – Sweet vanilla yogurt has the tang and sweetness you’d expect from cheesecake, but in a healthier package.
- Avocado – Avocado adds rich body to the “cheesecake” filling, plus turns it a fun green color to make it look like guacamole. CUTE!
- Honey – For a little added sweetness. Feel free to swap in agave nectar or maple syrup if you prefer.
- Fresh Strawberries – Strawberry cheesecake is a perennial favorite of mine. Feel free to swap in the berries or stone fruit of your choice.
How To Make Mini Strawberry Cheesecake Tacos
Prep. Preheat oven to 400ยฐF. Stir together sugar and cinnamon in a small bowl and set aside. Brush olive oil evenly on both sides of the mini flour tortillas.
Step 1: Make Dessert Taco Shells. Flip over a muffin pan and arrange the oil-brushed tortillas so they are resting between each cup. Bake in the preheated oven until tortillas are lightly browned, about 15 to 20 minutes.
Sprinkle shells with cinnamon sugar mixture while warm.
Step 2: Make Yogurt Avocado Cheesecake Filling. Place the yogurt, avocados, and honey in a blender or food processor. Mix until smooth. Fold in strawberries.
Step 3: Assemble & Serve. Spoon sweet avocado yogurt dip into each taco shell, garnish with fruits and berries, and sprinkle on coconut “cheese,” if using. Serve immediately & enjoy!
Optional Variations
As much as I love these strawberry cheesecake-filled tacos as written, there is plenty of room for you to create your own ideal dessert tacos. Here are just a few ideas:
- Vegan Cheesecake Tacos – Use coconut or soy-based yogurt and swap in agave or maple for honey.
- Gluten-Free Dessert Tacos – Use your favorite GF tortillas to make gluten-free sweet taco shells.
- Apple Pie Tacos – Fill your dessert taco shells with this apple pie filling for a fall-flavored treat.
- Apple Cheesecake Tacos – Use the avocado cheesecake filling as your base, then top with apple pie filling for a double dose of deliciousness.
- Cherry Cheesecake Tacos – Use roasted cherries in place of fresh strawberries.
- Banana Pudding Tacos – Use vanilla or banana pudding as your filling, then top with sliced bananas and crushed nilla wafers.
Obviously, these are just a few ideas to get your creative juices flowing. Let your imagination go wild and just have fun!
Simple yogurt, sliced fruit, ice cream, chopped mango with orange liqueur, pineapple empanada filling, dulce de leche, whipped cream, chocolate syrup, mini chocolate chips, sprinkles, and nuts, would all be simple and yummy fillings, toppings, and garnishes.
Expert Tips
- Make the cinnamon sugar dessert taco shells ahead of time for an even quicker dessert. Let them cool completely before storing in an airtight container (preferably with a leftover silica packet) for 3-4 days.
- Use Greek yogurt for a firmer, more cheesecake-like filling.
Frequently Asked Questions
There are tons of different ways to turn tacos into dessert. In this recipe, we transform flour tortillas into churro-flavored crispy taco shells, then fill them with a yogurt avocado cheesecake filling and fresh berries.
While you’re welcome to bake the taco shells up to 3 days in advance and mix up the yogurt cheesecake filling up to a day or two in advance, I don’t recommend assembling the dessert tacos until you are ready to serve them.
If you ask me, any Mexican dessert would pair well with tacos. That said, if you’re celebrating Taco Tuesday, why not stay on theme with this dessert taco recipe?!?
